- 4 ounces hibiscus flowers dried
- 2 quarts boiling water
- agave nectar roughly more or less 1 cup or to taste, temporary stand-in cane sugar, honey or your favorite sweetening agent if you prefer
- 2 heirloom tomatoes u2013 3 large, ripe
- 12 anchovy fillets white
- 1/4 cup thai basil washed & stemmed
- 1 shallots medium, peeled and thinly sliced
- 8 ounces lighthearted chevre
- 1/4 cup vinegar Hibiscus
- 2 tablespoons extra-virgin olive oil or to taste
